Warramate - 2021 Cabernet Merlot Malbec feel_Delicate scallops and white fishHandpicked, sorted and destemmed directly to a series of small 600kg fermenters. Cabernet Sauvignon berries are crushed to aid in the extraction of tannins, Merlot enjoys a whole berry ferment for plushness as did the Malbec. Fermentation on skins with hand plunging twice a day aids in the gentle extraction of colour, flavour and tactile palate components. Black mulberries and blueberry fruits with some bramble lift, a medium bodied classic claret
